Little Banana Bakery was founded by owner and cake artist Amanda Durham Quijada, whose career in baking and hospitality spans decades. Like many creatives, Amanda experienced a defining shift during the pandemic—one that led her to pursue her passion for cake artistry with intention and imagination. Her work is inspired by fashion, architecture, nature, and art in all its forms. Today, Amanda brings a thoughtful, design-forward approach to every cake, creating edible works of art that feel timeless, personal, and unforgettable.
A lifelong baker and graduate of the Oregon Culinary Institute’s pastry program, Amanda brings both artistry and discipline to her work. A devoted floraphile, she refined her craft under Maggie Austin, mastering the art of sugar flowers and sculptural design. With over 20 years of experience in catering, she is known for a proven track record of reliability and consistency. Guided by the belief that anything is possible if it can be dreamt, Amanda continually pursues advanced education in sugar artistry, working with intention and care—ensuring each bespoke creation transforms imagination into edible art through timeless technique and thoughtful innovation.
Amanda was raised in a modest home, yet her mother believed every birthday deserved to feel exceptional. Through thoughtfully made cakes, she created moments of beauty, celebration, and love—an experience Amanda now carries forward, crafting meaningful centerpieces for her clients and the community around us.

She delivered an absolutely beautiful cake that was completely picturesque and above and beyond what we could have ever hoped for!
